found this gem on the food network site, though not sure to to thank. i've added the cinnamon sugar topping.
1 cup sugar
8 tbsp (1 stick) butter (room temperature)
2 large eggs
3 frozen extra ripe bananas
1 tbsp milk
1 tsp cinnamon
1 cup all-purpose flour
1 cup whole wheat flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
extra cinnamon and sugar
preheat oven to 325 degrees f. grease 9x5x3in loaf pan.
thaw bananas in warm/hot water.
cream sugar and butter in a large mixing bowl until light and fluffy. add eggs one at a time, beating well after each addition.
add thawed bananas one at a time.
mix in milk and cinnamon.
in a separate bowl mix the two types flour, baking soda, baking powder and salt.
gradually add flour mixture to wet ingredients, mixing just until the flour disappears. (for those at high altitude add an extra 1/4 cup of flour).
pour batter into greased loaf pan. in a small bowl make a cinnamon sugar mix (like you would for a churro). sprinkle cinnamon sugar mix evenly on top of the batter, covering the entire surface area. bake 65-75 minutes, until a toothpick inserted in the center comes out clean.
set aside to cool for at least 15 minutes (this is the hardest part).
invert on a plate, then carefully flip right side up and let cool completely before slicing.
